Cook with Chef Mylène on a 3-day or 5-day workshop. She is wild plants expert and will show you how a plant-based way of life works that will delight your taste buds! Hands-on, no watching from the bleachers!

This short non-guided stay is for couples, groups of friends or families wishing to discover an art of living and a creative cuisine made from garden or wild plants. For a vegan fan, they will welcome on the plate and will contribute pleasantly to a varied, tasty and healthy cuisine. The hamlet is an ideal starting point to explore the Gorges of Galamus, Bugarach, Rennes-le Château, Carcassonne, the Cathar castles or visit the vegan vineyards. The sea is only an hour's drive away!

Day 1: Welcome and vegan dinner

Welcome to the friendly guest room of Mylène in a small hamlet on the Cathar Way. Your host, who has a passion for botany, will be happy to share her vegetarian cuisine with you. Participants will have a vegan dinner & aperitif before disbanding for the evening.

Day 2: 1st culinary workshop - hike

After the vegan breakfast, participants begin with a vegan cooking course using seasonal herbs and wild plants, or from ingredients harvested in the garden. There will already be some gourmet recipes. Lunch. The afternoon plans come with options: hiking from the guesthouse to either the Galamus gorge, the summit of Bugarach or to the Cathar castle of Duilhac under Perpeytuse village...or a good siesta. Vegan dinner.

Day 3: Departure

After vegan breakfast

Extended itinerary (5 days)

Vegan brunch. Participants choose from the options of Day 2 again: Galamus gorge, Bugarach or the castle of Duilhac. Then a visit to a vegan vineyard. Vegan dinner.

Day 4: 2nd culinary workshop

It starts right after breakfast. Partcipants once again collect seasonal produce before cooking the workshop(s) "Wild plants cooked right" or/and "Independent vegan cooking". Lunch together. Guests can spend the afternoon on another hike, there are a lot of beautiful spots to discover, or in bed. Vegan dinner at a vegan restaurant ( not incl.).

Day 5: Departure

After vegan breakfast.

Participants will stay at a simple, clean guesthouse with 2 guest rooms each with private bathrooms located in a hamlet on the Cathar Way. It boasts a shaded, flower-decorated terrace. Your host, Chef Mylène, is a trilingual cook who knows the world of botany like the back of her hand. She knows a lot of hiking tips, neat cooking ticks, feel free to ask about your own cooking hurdles.

For vegans, wild plants are welcome on the plate and contribute pleasantly to a varied, delicious and healthy cuisine. The village is an ideal starting point to explore the gorges of Galamus, Bugarach, Rennes-le-Château, Carcassonne, the Cathar castles, and the vegan wine cellars. The sea is only an hour's drive away!

Getting there

We recommend a journey with your car so you are locally mobile or with the course to Quillan or Perpignan and from there with the bus (line No.100, 1 € / trip/person) up to Saint Paul de Fenouillède. Then transfer to the guesthouse €15/trip can be paid on site. The guesthouse is located in a remote village and is difficult to reach without a car.
